California Raisin Alpine Granola

SERVES 8
- 300g jumbo oats
- 3 tbsp clear honey
- 3 tbsp sunflower oil
- 100ml apple juice
- 100g mixed nuts (walnuts, pecans,
- almonds etc.), roughly chopped
- 50g sunflower seeds
- 50g pumpkin seeds
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 150g California raisins
- 75g dried cranberries
- 50g dried sliced bananas
- Preheat your oven to 160C/300F/ Gas 2. Line two baking trays with non-stick parchment paper.
- Put the oats into a large bowl, whisk together the apple juice, honey and oil then pour over the oats and mix well. Fold in the nuts, seeds and spices, divide the mixture equally between the two baking trays and spread it across the sheets.
- Bake the granola until crisp and golden brown, for about one hour,turning the mixture over half way. Remove the baking trays from the oven and transfer to a large bowl. Cool the granola completely and then add the California raisins, cranberries and bananas.
- Store in an airtight container in a cool dry place. Do not refrigerate.
