ingredients

  1. 350ml/12fl oz plain flour
  2. 4 tablespoons cornmeal
  3. 4 tablespoons onion powder
  4. 2 teaspoons salt
  5. 350ml/12fl oz milk
  6. 1 large egg
  7. 8 large onions
  8. vegetable oil for deep-frying


Serves 4-6


  • Combine the flour, cornmeal, onion powder, salt, milk, egg and 125ml/4fl oz water in a large bowl. Stir well until there are no lumps and the batter is smooth.
  • Slice the onions across to make rings about 1cm/1⁄2in thick.
  • Heat the oil in a large saucepan until hot. Test to see whether the oil is hot enough by dropping a little of the batter into the oil – it should sizzle straight away.
  • Dip the separated rings into the batter. Drop the coated rings into the oil and fry until golden brown. Cook in batches if necessary. 
  • Remove the onion rings with a slotted spoon, and drain on kitchen paper. Serve hot.

SERVES 8


  • 300g jumbo oats
  • 3 tbsp clear honey
  • 3 tbsp sunflower oil
  • 100ml apple juice
  • 100g mixed nuts (walnuts, pecans,
  • almonds etc.), roughly chopped
  • 50g sunflower seeds
  • 50g pumpkin seeds
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 150g California raisins
  • 75g dried cranberries
  • 50g dried sliced bananas

  1. Preheat your oven to 160C/300F/ Gas 2. Line two baking trays with non-stick parchment paper.
  2. Put the oats into a large bowl, whisk together the apple juice, honey and oil then pour over the oats and mix well. Fold in the nuts, seeds and spices, divide the mixture equally between the two baking trays and spread it across the sheets.
  3. Bake the granola until crisp and golden brown, for about one hour,turning the mixture over half way. Remove the baking trays from the oven and transfer to a large bowl. Cool the granola completely and then add the California raisins, cranberries and bananas.
  4. Store in an airtight container in a cool dry place. Do not refrigerate.
