Life is good when you sit down to a homemade bowl of hot soup. It satisfies the soul just like fresh mountain air or a good book. Enjoy the sweet and smoky flavors of this soup, topped with a dollop of sour cream and savory, crunchy croutons. A little piece of heaven without leaving your kitchen. Even better, this dish is the perfect candidate for a make-ahead meal. Freeze this soup and reheat gently on a day when you’re short on time.
SERVES 1
FOR THE JAM
- 500g raspberries
- 4-5 tbsp agave or maple syrup, to taste
- 3 tbsp chia seeds
- 1 tsp lemon juice
FOR THE OATS
- 2tsp agave or maple syrup
- 120ml almond milk
- ½ vanilla pod, scraped
- 1 tbsp almond butter a small handful of raspberries plus extra
TO SERVE
- 6 tbsp rolled oats
- To make Chia jam, combine the fruit with maple syrup, to taste, and gently simmer for 10 minutes. Add a pinch of salt and the chia seeds and lemon juice, stir well and continue to cook for 10 minutes until thickened. Chill in the fridge for at least 2 hours.
- To make the overnight oats, mix together the syrup and almond milk then combine the vanilla seeds and almond butter. Roughly mash in the raspberries and tip over the oats, stir well, cover and leave to soak overnight (or at least for 2 hrs).
- In the morning, layer the oats and some of the jam into a jar or swirl in a bowl and top with extra raspberries.
Corn tacos can be bought from most supermarkets. They provide a crunchy shell that contrasts with the creaminess of the bean mash. Other white beans, such as butter beans or haricot beans, can be used instead of the cannellini if you prefer. The mash should have some texture so don’t aim to make it completely smooth.
The batter for these buckwheat pancakes can be made in advance and stored, covered, in the fridge for up to a day. It is good for making small pancakes but if you want to make larger ones, you’ll need to add a little more water or milk to create a thinner batter. Guacamole makes a good filling for savoury pancakes. To make sweet pancakes, add 1 teaspoon of ground cinnamon to the flour, and serve the pancakes with jam and cream, or lemon juice and maple syrup.
