Potato, Pea, Radish, Brown Rice

  • 1 tbsp tahini
  • 1 tsp tamari
  • juice of ½ lime
  • ½ tsp chilli flakes
  • 50g baby new potatoes, boiled
  • 4 radishes, sliced
  • 70g cooked brown rice
  • 25g rocket
  • 50g frozen peas, defrosted

  1. Whisk the tahini, tamari, lime juice, chilli flakes and 1 tablespoon of water together. Tip this dressing into a small container to keep separate from the salad.
  2. Cut the potatoes in half, put in a bowl and add the radishes, brown rice, rocket and peas. Mix together and put in your lunch box. Keep everything in the fridge, then at lunchtime, pour the dressing over your salad and enjoy.


Per Serving: 278 cals, 10.6g fat
